Why does the font change when I edit a PDF?

A PDF usually stores only the letters of a font that the document actually uses, not the whole font, and sometimes none at all if it relies on fonts on the author's computer. When you type a letter that isn't in that set, such as ə or a capital the text never used, the editor has to use another font, so the new text looks a little different.
